Jim:
Robert McCullough and Mary Ann Welch were married 10 Jan 1861 at St.
George's, Parrsboro.
I guess we'll never know for sure. If she was born in 1860, then she would
be born illegitimate / out of wedlock, then possibly a reason for the
parents to fib about her on the Censuses about her actual age to try and
hide this fact.
My point was she was born before well before 1874 as per the 1901 Census,
perhaps not wanting to appear older than hubby, Charles Edward Dunphy who
was born 29 Jan 1873.
As her son, Fred was brought up by his grandparents as a son, perhaps he
wasn't all that sure when his birth mother was actually born when it came
time to be the informant on her death record.
Like you, I'm now going to go with "about 2 May 1864" as the top birth date
with note: "1871 & 1881 Census". Then beneath that a second birth date "2
May 1860" with note: "death record"
